Salad - wow do I love veggies and fruit

At home due to the ice today and made the most fabulous salad!! Thought I would share with you all.

Spinach and mixed greens
1 apple diced
sprinkle of dried cranberries

Topped it with:
Canned chicken breast with a TBL of light mayo, red grapes and chopped celery mixed into it.

YUM! YUM!

Think I will try this again soon. I calculated it at around 300 calories. Very filling for that amount. Not sure what I could use instead of the mayo.

  3. Tara, I have a potential option for the mayo...two, actually.

    One is greek yogurt. have you tried it? It is the same consistency as sour cream and I use it as sub for sour cream and also for veggie dip. It is low-sugar (for yogurt) and high high protein. With veggies, I add powdered ranch dressing mix into the yogurt and it's incredible.

    Option 2: Have you ever tried Walden Farms Dressing? They are mostly fat and calorie free. They are all natural and I have found my favorite flavors to be the Caesar, Italian and Honey Mustard. They also have Blue Cheese, Ranch and Thousand Island. Many people find these dressings to be an "acquired taste" and I understand that. I love them and it saves me literally thousands of calories each month. It is on sale at many Krogers in the diet section. Meijer also sells it.
